Au­tumn ap­ple and raisin cake

170g but­ter

340g self-rais­ing flour 2 tsp ground cin­na­mon 285g de­mer­ara sugar 85g raisins

2 eggs 250 ml milk 450g grated ap­ples


Pre­heat oven to 175C. Melt the but­ter in a small saucepan. Mix in all the re­main­ing in­gre­di­ents, sift­ing in the flour and the spice. Pour into a greased loaf tin and bake for 1–11⁄2 hours.

The cake is cooked when it is chest­nut brown on top and a skewer to the mid­dle comes out clean.
