Autumn apple and raisin cake
340g self-raising flour 2 tsp ground cinnamon 285g demerara sugar 85g raisins
2 eggs 250 ml milk 450g grated apples
Preheat oven to 175C. Melt the butter in a small saucepan. Mix in all the remaining ingredients, sifting in the flour and the spice. Pour into a greased loaf tin and bake for 1–11⁄2 hours.
The cake is cooked when it is chestnut brown on top and a skewer to the middle comes out clean.
