Make your own short­crust

1 Sift 1 ½ cups plain flour into a large bowl. Rub in 125g chopped cold but­ter. 2 Add 1-2 tbsp cold wa­ter. Mix to make a firm but pli­able dough. 3 Knead lightly. Wrap in plas­tic wrap. Chill 30 min­utes to rest.
