1 bunch fresh co­rian­der 175g Chi­nese sausages, sliced ½ cup laksa paste 250g packet fresh stir-fry veg­eta­blesables 450g packet jas­mine rice

1 Re­move leaves from co­rian­der and set aside. Finely chop roots and stems.

2 Pre­heat a wok or large fry­ing pan on high. Add sausage and stir-fry 2-3 mins un­til golden. 3 Stir in laksa paste and chopped co­rian­der. Stir-fry 1 min. 4 Add veg­eta­bles and stir-fry 1 min un­til just ten­der. Mix in rice and stir-fry 1-2 mins well com­bined and heated through.

5 Serve topped with co­rian­der leaves and crispy noo­dles.
