LAKSA FRIED RICE

1 bunch fresh coriander 175g Chinese sausages, sliced ½ cup laksa paste 250g packet fresh stir-fry vegetablesables 450g packet jasmine rice
1 Remove leaves from coriander and set aside. Finely chop roots and stems.
2 Preheat a wok or large frying pan on high. Add sausage and stir-fry 2-3 mins until golden. 3 Stir in laksa paste and chopped coriander. Stir-fry 1 min. 4 Add vegetables and stir-fry 1 min until just tender. Mix in rice and stir-fry 1-2 mins well combined and heated through.
5 Serve topped with coriander leaves and crispy noodles.
