ONE-PAN SAUSAGE BAKE
SERVES 4 PREP 10 MINS COOK 30 MINS COST $$$$$
8 thick beef sausages 2 yellow capsicums, thickly sliced 1 small red onion, wedges 375g cherry tomatoes 2 cups water 1 cup instant polenta ¾ cup cream ¼ cup finely grated parmesan ¼ cup loosely packed fresh small basil leaves Preheat oven to hot, 200°C. Heat a large flameproof roasting pan over high heat. Cook sausages, turning occasionally, 5 mins until browned all over. Add capsicum and onion. Season.
Roast 15 mins. Add tomatoes and roast a further 15 mins until sausages are cooked through and vegetables are tender.
Meanwhile, bring water to boil in a medium saucepan over high heat. Stir in polenta, reduce heat to low. Cook, stirring, 10 mins until polenta thickens. Stir in cream. Cook, stirring, 5 mins until polenta thickens. Stir in parmesan. Season to taste.
Serve sausages and vegetables with polenta. Top with basil leaves.
