MEDITERRANEAN PASTA SALAD
SERVES 4 PREP 10 MINS COOK 12 MINS PER SERVE 3297kj
375g casarecce pasta 3 cups mixed chargrilled vegetables (capsicum, zucchini, onion, eggplant) 230g jar pitted Sicilian olives, drained 1 cup parsley leaves
cup extra-virgin olive oil 2 tbsp lemon juice 1 garlic clove, crushed rocket salad, crusty bread, to serve
In a large saucepan of boiling salted water, cook pasta following packet instructions. Drain well. Return to pan. Set aside. Toss vegetables and parsley through pasta. In a jug, whisk oil, juice and garlic together. Season.
When ready to serve, toss dressing through the pasta. Accompany with rocket salad and crusty bread.
