375g casarecce pasta 3 cups mixed char­grilled veg­eta­bles (cap­sicum, zuc­chini, onion, egg­plant) 230g jar pit­ted Si­cil­ian olives, drained 1 cup pars­ley leaves

cup ex­tra-vir­gin olive oil 2 tbsp lemon juice 1 gar­lic clove, crushed rocket salad, crusty bread, to serve

In a large saucepan of boil­ing salted wa­ter, cook pasta fol­low­ing packet in­struc­tions. Drain well. Re­turn to pan. Set aside. Toss veg­eta­bles and pars­ley through pasta. In a jug, whisk oil, juice and gar­lic to­gether. Sea­son.

When ready to serve, toss dressing through the pasta. Ac­com­pany with rocket salad and crusty bread.
