CHEAT’S CHICKEN BANH MI
SERVES 4 PREP 15 MINS 1 barbecue chicken, flesh shredded 4 green onions, cut thinly diagonally, soaked in iced water 4 long crusty bread rolls, split ¹/³ cup Japanese mayonnaise ½ iceberg lettuce, finely shredded 1 red capsicum, seeded, thinly sliced 1 bunch coriander, leaves picked 1 long red chilli, sliced
¹/³ cup lemon juice ¼ cup fish sauce 2 tbsp light soy sauce 1 ½ tbsp caster sugar In a large bowl, combine chicken and onion.
In a small bowl, whisk all ingredients together until sugar dissolves. Season with white pepper. Add half dressing to chicken mixture, tossing well.
Spread rolls with mayonnaise. Fill with lettuce, capsicum and chicken mixture. Drizzle with remaining dressing. Top with coriander and chilli to serve.
