CHEAT’S CHICKEN BANH MI

SERVES 4 PREP 15 MINS 1 bar­be­cue chicken, flesh shred­ded 4 green onions, cut thinly di­ag­o­nally, soaked in iced wa­ter 4 long crusty bread rolls, split ¹/³ cup Ja­panese may­on­naise ½ ice­berg let­tuce, finely shred­ded 1 red cap­sicum, seeded, thinly sliced 1 bunch co­rian­der, leaves picked 1 long red chilli, sliced

DRESSING

¹/³ cup lemon juice ¼ cup fish sauce 2 tbsp light soy sauce 1 ½ tbsp caster sugar In a large bowl, com­bine chicken and onion.

2 DRESSING

In a small bowl, whisk all in­gre­di­ents to­gether un­til sugar dis­solves. Sea­son with white pep­per. Add half dressing to chicken mix­ture, toss­ing well.

Spread rolls with may­on­naise. Fill with let­tuce, cap­sicum and chicken mix­ture. Driz­zle with re­main­ing dressing. Top with co­rian­der and chilli to serve.
