In a food pro­ces­sor, pulse 1 cup al­mond meal, 1/ cup chopped, dried pit­ted dates, 3 ¼ cup pis­ta­chios, ¼ cup des­ic­cated co­conut and 2 tsp matcha pow­der un­til com­bined. Add 1 ½ tbsp co­conut oil. Pulse un­til mix­ture comes to­gether. Roll heaped 1 tbsp into balls. Roll in com­bined ¼ cup des­ic­cated co­conut and 2 tbsp chopped pis­ta­chios to coat. Place on a tray and chill 30 mins un­til firm. Serve dusted with ex­tra matcha pow­der. Store in an air­tight con­tainer in the fridge for up to 7 days.
