LEMON TEA CAKE SCONES
MAKES 16 PREP 25 MINS + STANDING COOK 10 MINS
1 quantity Basic Scones 2 tsp finely grated lemon zest 1½ cups icing sugar 2 tbsp lemon juice 2 tbsp milk yellow, pink and green food colouring coloured candy decorations, to serve
1 Preheat oven to 200°C. Make Basic Scones as recipe directs, adding zest in step 2 and using a floured 4cm round cookie cutter to cut 16 scones from dough.
2 Whisk icing sugar, juice and milk in a bowl until smooth. Divide icing into 3 portions, then tint yellow, pink and green. Spread 1 tsp icing over each cooled scone. Top with decorations. Stand 10 mins for icing to set.
