LEMON TEA CAKE SCONES

MAKES 16 PREP 25 MINS + STAND­ING COOK 10 MINS

1 quan­tity Ba­sic Scones 2 tsp finely grated lemon zest 1½ cups ic­ing sugar 2 tbsp lemon juice 2 tbsp milk yel­low, pink and green food colour­ing coloured candy dec­o­ra­tions, to serve

1 Pre­heat oven to 200°C. Make Ba­sic Scones as recipe di­rects, adding zest in step 2 and us­ing a floured 4cm round cookie cut­ter to cut 16 scones from dough.

2 Whisk ic­ing sugar, juice and milk in a bowl un­til smooth. Di­vide ic­ing into 3 por­tions, then tint yel­low, pink and green. Spread 1 tsp ic­ing over each cooled scone. Top with dec­o­ra­tions. Stand 10 mins for ic­ing to set.
