TUR­KEY CHILLI

✦ 1 tbsp olive oil

✦ 1 chorizo sausage, finely chopped

✦ 1 onion, chopped

✦ 2 gar­lic cloves, crushed

✦ 500g tur­key mince

✦ 1 red cap­sicum, seeded, chopped

✦ 1 fresh long red chilli, thinly sliced

✦ 2 tsp ground cumin

✦ 2 tsp chopped oregano

✦ 1 tsp ground co­rian­der

✦ 1½ cups beef stock

✦ 1½ cups pas­sata

✦ 400g can 3 bean mix, rinsed, drained

✦ co­rian­der leaves, chopped av­o­cado, light sour cream, toasted tor­tillas, chopped toma­toes, jalapenos, to serve

1 In a large saucepan, heat oil on high. Cook chorizo, onion and gar­lic 4-5 mins un­til onion is ten­der. Add mince and brown, break­ing up lumps, 3-4 mins.

2 Add cap­sicum, chilli and spices. Cook, stir­ring, 5 mins.

3 Mix in stock, pas­sata and beans. Bring to boil on high. Re­duce heat to low and sim­mer, cov­ered, 45-50 mins un­til meat is ten­der and sauce has thick­ened slightly.

4 Sprin­kle with co­rian­der. Serve chilli with av­o­cado, sour cream, tor­tilla, tomato and jalapenos.
