IN­GRE­DI­ENTS: ½ cup co­conut oil ¼ cup rice malt syrup ½ cup raw ca­cao pow­der ½ cup puffed mil­let, puffed spelt or puffed rice 1 cup al­monds (or your favourite nut)

3 tbs al­mond but­ter ¼ cup ca­cao nibs ½ cup goji berries

1 tsp bee pollen

½ cup co­conut flakes 1 tsp maca pow­der

1 tsp vanilla essence

METHOD:

1. Melt co­conut oil in a small saucepan.

2. Add rice malt syrup and raw ca­cao pow­der and stir un­til com­bined.

3. Re­move from heat and stir through re­main­ing in­gre­di­ents.

4. Line a medium-sized bak­ing tray or con­tainer with bak­ing pa­per and pour in rocky road mix­ture. Trans­fer to the freezer for at least 2 hours be­fore serv­ing (freeze overnight if pos­si­ble).

5. Store in the freezer.
