1 # STOCK UP ON STAPLES
It helps! Hit the supermarket for items that can live happily in your pantry (such as canned tomatoes) or freshies that linger longer than most in the fridge (hello, eggs and cheese). Be more sparing with delicate leafy greens such as rocket or baby spinach, which tend to wilt and turn slimy after a few days. Instead, get your fill from hardier ones such as cabbage and kale (if the latter is looking a little grim, just trim and remove the stalk and plunge the leaves into iced water for 15 minutes). Healthy protein sources such as fish fillets or chicken tenders also work a treat, as they keep in the freezer for months and can be defrosted at a moment’s notice. Win!
