Sweet and Sour Meat or Fish

In­gre­di­ents For 4 peo­ple

2 Chicken Breasts/ 1 lb Pork or 1 lb firm Fish fil­let Monk­fish/ Had­dock

1 Pep­per

1 Onion

1 Tomato

10 cm Cu­cum­ber

2 rings of Pineap­ple

3 cloves of Gar­lic

1 tsp Chicken Pow­der

1 tbsp Palm Su­gar

1 tbsp Chilli Sauce

1 tbsp Tomato Ketchup

1 tbsp Soy Sauce

Crush or finely slice the gar­lic and fry in a large fry pan with 2 ta­ble­spoons of oil un­til just turn­ing golden brown, then add the meat and fry for 2 min­utes.

Add the chopped veg­eta­bles and fry for an­other 3 min­utes.

Now add the chicken pow­der, su­gar, soy, chilli and ketchup. If us­ing fish not meat add the fish now, just be­fore the sauce in­gre­di­ents. Cook for 2 more min­utes or un­til fish/meat is cooked. Serve with boiled rice.

If more sauce is re­quired just add a lit­tle water dur­ing the fi­nal 2 min­utes.
