WATERMELON CAPRESE SKEWERS
MAKES: SERVINGS SKEWERS PREP TIME: MINUTES Basil and watermelon are a terrific late-summer pairing, and the saltiness of the feta and olives makes the melon taste even sweeter. Balsamic glaze is a thick concentrate of the vinegar, which brings a lovely sweet-sour element to these pretty bites (look for it in the vinegar aisle of your supermarket).
¼ large seedless watermelon 1 (150 g) pkg feta
24 small fresh basil leaves 12 pitted kalamata olives Balsamic glaze
Cut watermelon into 12 (1-inch/2.5 cm) cubes and place on a serving platter. Cut feta into 12 (¾-inch/2 cm) cubes and place 1 cube on top of each piece of watermelon. Top each with 2 basil leaves and 1 olive. Skewer each stack together and drizzle with a little balsamic glaze.
