The flavours of lemon, gar­lic and thyme match well with al­most any meat or fish. Mar­i­nate 500 g (1 lb) shrimp, chicken, pork or beef for 20 min­utes then grill.

IN­GRE­DI­ENTS

3 strips lemon peel

Juice of 1 lemon (about ¼ cup)

1 large gar­lic clove, smashed and peeled 3 large sprigs fresh thyme

METHOD

Com­bine marinade in­gre­di­ents in a zip-lock bag or shal­low dish, bash­ing the lemon peel, gar­lic and thyme lightly with a spoon. Add meat or shell-on shrimp and mar­i­nate at room tem­per­a­ture for 20 min­utes.
