Or­der sta­ples such as murg makhani (bone­less chicken sim­mered in a rich tomato gravy), suc­cu­lent seekh ke­bab (skew­ers of spicy lamb mince grilled in a clay oven) and saag pa­neer (hunks of cottage cheese float­ing in a spinach broth).
