Gourmet fare is not, in gen­eral, a strong point of the hu­tong restau­rants, partly be­cause of the space con­straints. In­stead, the pro­pri­etors stick to pro­duc­ing sim­ple food well. In the case of Bri­ton Will Yorke, that fo­cus has been pri­mar­ily on up­scale pub dishes us­ing fresh in­gre­di­ents, per­son­ally tested recipes, and of course a proper pint of ale.
