Boast­ing many of In­sta­gram’s favourite decor trends, in­clud­ing white mar­ble coun­ter­tops and pic­turesque ex­posed brick walls, Bad­dies can make din­ers feel like they are din­ing on an In­sta­gram stage. But when it comes to food, the café doesn’t rely on gim­micks. A vanilla bean hotcake is trans­formed into an In­sta­gram-ready feast with a strik­ing ar­ray of sea­sonal pro­duce. Un­der­neath the top­pings, a hid­den layer of laven­der bark made from dark choco­late and fresh laven­der proves that the dish isn’t only about es­thet­ics. The choco­late gives the hotcake an ad­dic­tive crunchy tex­ture while the laven­der pro­vides a spicy flo­ral aroma that com­ple­ments that of the nas­tur­tium flow­ers on top. —C.M.
