Clas­sic Sugar Cookie dough

Makes: 1 batch dough Use this fool­proof cookie dough to make our Clas­sic Sugar Cook­ies (see recipe be­low), our present-wor­thy Gift Tag Cook­ies (see recipe, right) or our su­per-cute Sugar Cookie Place Cards (see recipe, page 38).

¾ cup but­ter, soft­ened

1 cup gran­u­lated sugar

1 egg

1 tsp vanilla

2½ cups all-pur­pose flour

½ tsp bak­ing pow­der pinch salt

In large bowl, beat but­ter with sugar un­til light and fluffy; beat in egg and vanilla. Whisk to­gether flour, bak­ing pow­der and salt; stir into but­ter mix­ture in 3 ad­di­tions. If nec­es­sary, knead to form smooth dough. Di­vide dough in half; shape into discs. Wrap each in plas­tic wrap; re­frig­er­ate un­til firm, about 1 hour. (Make-ahead: Re­frig­er­ate for up to 24 hours.) Let stand at room tem­per­a­ture un­til soft enough to roll out, about 15 min­utes.
