COFFEE SHORTBREAD COOKIES
Welcome holiday guests this season with these delectable coffee cookies. They have a unique and delicious flavour and are the perfect way to warm up winter when getting together with family and friends.
(For 10 servings) 2 tbsp Lavazza ground coffee 2 cups plus 2 tbsp plain flour
¾ cup butter
¾ cup icing sugar
1 egg yolk
Mix the sugar and butter until it becomes creamy. Create a well in the middle of the flour, dust it with the ground coffee and pour the butter and sugar mixture into the middle. Now add the egg and y olk to the well and begin to stir all the ingredients together, combining them slowly. Knead until you have a uniform dough, then chill in the fridge for approximately one hour.
Roll out the dough on a board until the desired thickness is reached. Use cookie cutters to cut out your cookie shapes. If desired, top each one with a coffee bean. Place them on baking paper and bake at 180°C (350°F) for 10 to 12 minutes.
