WHITE BEAN SALAD WITH SEARED STEAK

This flavour­ful salad can be put to­gether in a mat­ter of min­utes and—served with­out the steak—makes the per­fect light lunch. Serve with crusty bread.

Sprin­kle steak with half of the thyme, the salt and pep­per. In cast-iron or non­stick skillet, heat veg­etable oil over medium-high heat; fry steak, turn­ing once, un­til medium-rare, 6 to 8 min­utes. Trans­fer to plat­ter; let stand for 10 min­utes. Mean­while, in large bowl, whisk to­gether olive oil, vine­gar and mus­tard; stir in beans, cu­cum­ber, feta cheese, onion and re­main­ing thyme. Serve with steak.
