Use your senses when se­lect­ing the fresh­est fish pos­si­ble. Look for bright, clear eyes and healthy gills (if head is at­tached) or fil­lets that are bright and shiny wet (not dull and flaky). Choose fish that smells of the sea, not of strong fish. And se­lect fish that feels firm and slightly rub­bery when touched, not hard or dry.
