CHANGE IT UP—LEFTOVERS:
Reheat leftover vegetable stew. Spread ⅔ cup stew over thick puffed pita bread, leaving ½-inch (1 cm) border. Dot with goat cheese or feta cheese. Bake in 400°F (200°C) oven until cheese begins to brown, about 12 minutes. Sprinkle with fresh mint, and chopped iceberg lettuce, tomato and cucumber. Drizzle with tahini or yogurt thinned with lemon juice.
