Van­cou­ver res­tau­rant wins vote for best len­til dish in FunDeLen­til Tour

An en­tree cre­ated by a Van­cou­ver chef has been cho­sen as the favourite dish fea­tur­ing home­grown lentils in a cross­coun­try com­pe­ti­tion.

Chorizo and len­til ragout served at Fa­ble res­tau­rant, owned by chef Trevor Bird, was ranked No. 1 in an online vote in the FunDeLen­til Tour.

Sec­ond place went to chef Mark Gray of Brook­lyn Ware­house in Hal­i­fax for his sus­tain­able blue rain­bow trout with bel­uga len­til-stuffed sum­mer squash.

Chefs in two dozen restau- rants across Canada com­peted last month with sig­na­ture dishes all in­cor­po­rat­ing the same home­grown in­gre­di­ent: lentils. The restau­rants added the cre­ation to their menus for cus­tomers to or­der and vote on.

Canada is one of the world's largest pro­duc­ers of lentils.
