Vancouver restaurant wins vote for best lentil dish in FunDeLentil Tour
An entree created by a Vancouver chef has been chosen as the favourite dish featuring homegrown lentils in a crosscountry competition.
Chorizo and lentil ragout served at Fable restaurant, owned by chef Trevor Bird, was ranked No. 1 in an online vote in the FunDeLentil Tour.
Second place went to chef Mark Gray of Brooklyn Warehouse in Halifax for his sustainable blue rainbow trout with beluga lentil-stuffed summer squash.
Chefs in two dozen restau- rants across Canada competed last month with signature dishes all incorporating the same homegrown ingredient: lentils. The restaurants added the creation to their menus for customers to order and vote on.
Canada is one of the world's largest producers of lentils.
