Grilled Wa­ter­melon Tofu Salad

Three rounds half-inch cut wa­ter­melon

Half cube of medium-firm tofu

6-8 Basil leaves

Two ta­ble spoons of olive oil Half tea­spoon each of salt and pep­per

Half cup of vine­gar

Two ta­ble­spoons of honey

Pre­heat the grill to medium-high. Cut half-inch thick tofu slices and wa­ter­melon rounds in quar­ters. Brush them lightly with olive oil. Sprin­kle some salt and pep­per. Grill them un­cov­ered, al­most for one minute for each side. Re­move when the grill marks are vis­i­ble. Trans­fer them to a serv­ing plate, add basil leaves and sprin­kle some bal­samic glaze. To make bal­samic glaze, boil vine­gar in heavy saucepan, re­duce the heat and let it get thick by cook­ing for al­most 10 min­utes. Re­move and let it cool. Add some honey and pinch of salt.
