Grilled Watermelon Tofu Salad
Three rounds half-inch cut watermelon
Half cube of medium-firm tofu
6-8 Basil leaves
Two table spoons of olive oil Half teaspoon each of salt and pepper
Half cup of vinegar
Two tablespoons of honey
Preheat the grill to medium-high. Cut half-inch thick tofu slices and watermelon rounds in quarters. Brush them lightly with olive oil. Sprinkle some salt and pepper. Grill them uncovered, almost for one minute for each side. Remove when the grill marks are visible. Transfer them to a serving plate, add basil leaves and sprinkle some balsamic glaze. To make balsamic glaze, boil vinegar in heavy saucepan, reduce the heat and let it get thick by cooking for almost 10 minutes. Remove and let it cool. Add some honey and pinch of salt.
