“Think global, eat lo­cal.” This has been the motto of Ed Ho for years, and his menus are con­sis­tently re­flec­tive of it. His award-win­ning VQA menu of­fers one of the largest On­tario wine selec­tions in Toronto. Each dish comes with a VQA rec­om­men­da­tion. A salad of roasted but­ter­nut squash with creamy pressed yo­gurt and crispy shal­lots is a mélange of bold flavours and tex­tures that is com­ple­mented by a bright Tawse Win­ery Ries­ling. Gen­er­ously por­tioned veal cheek, braised 12 hours to ul­ti­mate ten­der­ness, lightly breaded and lav­ished with tangy Wiser’s purée, min­gles with Mon­forte Toscano, and pairs with a flirty Hid­den Bench Rosé. Pop­u­lar on the menu is hal­ibut and lob­ster, but I’m drawn to the Welling­ton County ten­der­loin with smoked mar­row ravi­oli and North­ern Woods mush­room jus. Such rich, juicy flavours re­quire Mega­lo­ma­niac’s Caber­net Sauvi­gnon. We are told that wine bot­tles are half-price on Sun­days, and glasses are half-price for the after-work crowd, along with buck-a-shuck oys­ters. Globe has had a makeover to em­brace the Earth.
