In­land from the Span­ish Costa Blanca is the city of Mur­cia. Here, the farm­ers of Mur­cia, An­dalu­cia and the Va­len­cian com­mu­nity har­vest honey from acres of or­gan­i­cally grown wild­flow­ers and cre­ate a silky, golden honey that is smooth and, amaz­ingly, does not drip. The del­i­cate scent of wildflower essence is in ev­ery spoon­ful. For most honey pro­duc­ers, that would be enough, but for e’coato, it’s just the be­gin­ning. They add a big help­ing of cer­ti­fied or­ganic Mar­cona al­monds to ev­ery jar. Toast a thick slice of bread, add a driz­zle of Span­ish olive oil, and spoon on the honey and al­monds. Es muy bueno.
