Al­low Todd Cham­bers, the kilt-wear­ing (really) made-in-Ot­tawa owner of Really Hor­ri­ble En­ter­prises, to tell you how to use th­ese lo­cally made maple syrups. His first tip? “Use spar­ingly! A lit­tle goes a long way.” Bar­rel-aged “This syrup has a sub­tle smoky taste, like it was made over an open fire. Use on any­thing plain, like waf­fles or pan­cakes, to en­hance the ex­pe­ri­ence. Put a driz­zle in some Cana­dian whisky and make your own real maple whisky.” Brandy vanilla “This is amaz­ing in a sim­ple cup of black tea.
