11/ 2 oz. (45 mL) Jameson Irish Whiskey 1 oz. (30 mL) maple syrup 2 oz. (60 mL) freshly squeezed grapefruit juice 1 large egg white Put all the ingredients in a shaker and shake for about 30 seconds. Fill the shaker halfway with ice, and then shake for another 30 seconds. Taste the drink; if it’s too tart, add more maple syrup. Fill a glass with ice and water to chill it and then drain. Strain the drink into the glass. Garnish by slowly pouring ¼ oz. maple syrup over the foam.
