Although it’s true that rosé wines from Provence should be served chilled, be care­ful not to overdo it. If they get too cold, their aro­mas will stay trapped in your glass and you’ll lose that dash of fruit and those del­i­cate notes of gar­rigue or spices that give th­ese wines so much char­ac­ter. Chill at 8°C to 10°C – just a tad warmer than a dry white.
