Although it’s true that rosé wines from Provence should be served chilled, be careful not to overdo it. If they get too cold, their aromas will stay trapped in your glass and you’ll lose that dash of fruit and those delicate notes of garrigue or spices that give these wines so much character. Chill at 8°C to 10°C – just a tad warmer than a dry white.
