In the be­gin­ning, a dark­ness hung over the cof­fee-drinkers of Win­nipeg — or more ac­cu­rately, a dou­ble-dou­ble in­fused beige­ness. Seven years ago, a tiny cof­fee shop called Par­lour threw open its doors on Main St. and the cof­fee drinkers had cor­ta­dos and they lived hap­pily ever af­ter. Par­lour and owner Nils Vik have been at the front end of a wave of a chang­ing men­tal­ity here in the city. Maybe we can have nice things too?

When you or­der by phone (or­ders take 20 min­utes, so call first) don’t ex­pect small talk, just si­lence un­til you tell them what you want, fol­lowed by “Spicy?” Af­ter your re­sponse, the line will go dead. How long will it take? Did they get my or­der? It’s al­ways about 20 min­utes, and of course they got your or­der. The pro­pri­etors are the sweet­est el­derly cou­ple you could imag­ine and they make per­fect gourmet bahn mis that cost about $7.
