Roasted Cauli ower Tacos

1. Pre­heat oven to 400 de­grees. 2. Chop cauliȈlower into small Ȉlorets. In a large bowl, toss Ȉlorets with olive oil. On a large plate, mix panko, spices and a bit of salt and pep­per to­gether till well com­bined. Toss Ȉlorets in panko mix till coated. Spread evenly on a bak­ing sheet and pop in oven 25 to 30 min­utes, un­til cauli is golden and ten­der. 3. While veg is bak­ing, com­bine av­o­cado with sour cream and lime juice. Mash with fork un­til you have a smooth con­sis­tency. Taste and add salt and pep­per. Prep ex­tras and warm up the tor­tillas. 4. Spread a good dol­lop of av­o­cado on each tor­tillas. Place a hand­ful of the baked cauli on top, then load on your top­pings.
