Roasted Cauli ower Tacos
1. Preheat oven to 400 degrees. 2. Chop cauliȈlower into small Ȉlorets. In a large bowl, toss Ȉlorets with olive oil. On a large plate, mix panko, spices and a bit of salt and pepper together till well combined. Toss Ȉlorets in panko mix till coated. Spread evenly on a baking sheet and pop in oven 25 to 30 minutes, until cauli is golden and tender. 3. While veg is baking, combine avocado with sour cream and lime juice. Mash with fork until you have a smooth consistency. Taste and add salt and pepper. Prep extras and warm up the tortillas. 4. Spread a good dollop of avocado on each tortillas. Place a handful of the baked cauli on top, then load on your toppings.
