• 1 shal­lot, finely chopped • 1 clove gar­lic, finely chopped • 3 tbsp (40 g) but­ter • 4 thin slices ham, finely chopped • 1/4 cup (40 g) un­bleached allpur­pose flour • 1 pinch ground nut­meg • 3 1/2 cups (875 mL) chicken broth • 1/2 cup (125 mL) 35 per cent heavy cream or 15 per cent cook­ing cream • 1 tsp (5 mL) whole-grain mus­tard • 2 1/2 cups (225 g) grated mild or­ange ched­dar cheese • 4 cups (1 L) cooked broc­coli flo­rets
