The pro­lific pro­duc­tion of the zuc­chini re­sults in the an­nual search for ways to use the crop with­out wast­ing a morsel. Per­haps the most pop­u­lar use for zuc­chini is in a cake or loaf, usu­ally ac­com­pa­nied by a cho­co­late base. But there are nearly as many recipes for zuc­chini as there are zuc­chi­nis avail­able in home gar­dens or at farm­ers’ mar­kets. This week’s recipes of­fer three ways to make ap­pe­tiz­ing use of some of this year’s zuc­chini crop. While fresh is al­ways best, all the recipes can be made from frozen zuc­chini but be sure to re­move most of the ex­cess mois­ture be­fore us­ing.
