Zucchini accompanied by chocolate and cheese
The prolific production of the zucchini results in the annual search for ways to use the crop without wasting a morsel. Perhaps the most popular use for zucchini is in a cake or loaf, usually accompanied by a chocolate base. But there are nearly as many recipes for zucchini as there are zucchinis available in home gardens or at farmers’ markets. This week’s recipes offer three ways to make appetizing use of some of this year’s zucchini crop. While fresh is always best, all the recipes can be made from frozen zucchini but be sure to remove most of the excess moisture before using.
