BIG EYE TUNA PIZZA

Back’s num­ber one dish fea­tures a crisp tor­tilla lay­ered with a su­per-se­cret umami aïoli fol­lowed by fresh slips of tuna. The in­no­va­tive pie is fin­ished off with a driz­zle of truf­fle oil.

CRISPY PORK BELLY ROLL

Back starts with brown rice, which is then stuffed with a strip of pork belly that’s been mar­i­nated in miso and breaded. Coleslaw and lash­ings of mayo dress­ing top it all off.

JEJU DOMI

Folks have been yap­ping about this dish for years. Why? With a name that ref­er­ences Jeju-do Is­land, the Hawaii of Korea, it is pure in its flavours. Pieces of Korean red snap­per sashimi are loaded with gochu­jang, Korea’s fiery red chili paste, for bold bites.
