Dig fresh-pressed juice? I love me a good ap­ple, beet and ginger bev­er­age, but it leaves a mas­sive amount of fi­brous waste that just ends up in the com­post bin. Vil­lage Juicery pro­duces hun­dreds of pounds of or­ganic fruit and veg­gie waste pulp ev­ery month. Nice thing is they do­nate all of it to Earth + City, which makes su­per-tasty all-or­ganic crack­ers with it. On­tar­i­ogrown sun­flower seeds and flax get ground into a flour, then mixed with the juice pulp along with olive oil, ta­mari, ap­ple cider vine­gar, herbs and spices, then spread onto low-temp de­hy­dra­tors. Crack­ers come in Spicy Car­rot Na­cho, Beet Dill and my fave, Kale Rose­mary. I’m not crazy about the plas­tic clamshell con­tainer (al­though it’s re­cy­clable), but the crack­ers can be pur­chased in bulk if or­dered on­line or at Dufferin Grove Farm­ers Mar­ket. $9/box at Vil­lage Juicery lo­ca­tions, Earth + City farm­ers’ mar­ket booths.
