Dig fresh-pressed juice? I love me a good apple, beet and ginger beverage, but it leaves a massive amount of fibrous waste that just ends up in the compost bin. Village Juicery produces hundreds of pounds of organic fruit and veggie waste pulp every month. Nice thing is they donate all of it to Earth + City, which makes super-tasty all-organic crackers with it. Ontariogrown sunflower seeds and flax get ground into a flour, then mixed with the juice pulp along with olive oil, tamari, apple cider vinegar, herbs and spices, then spread onto low-temp dehydrators. Crackers come in Spicy Carrot Nacho, Beet Dill and my fave, Kale Rosemary. I’m not crazy about the plastic clamshell container (although it’s recyclable), but the crackers can be purchased in bulk if ordered online or at Dufferin Grove Farmers Market. $9/box at Village Juicery locations, Earth + City farmers’ market booths.
