Buy av­o­ca­dos at vary­ing de­grees of ripeness as they con­tinue to ripen af­ter pur­chase. Buy bright green for fu­ture use, green for soon and black yet firm for im­me­di­ate use. When adding av­o­ca­dos to dishes, slice or mash them just be­fore serv­ing. To stop them from brown­ing, sprin­kle with lemon or lime juice. To ripen av­o­ca­dos more quickly, place near ba­nanas. Re­frig­er­ate to stop or slow down ripen­ing.
