1/4 cup (60 mL) su­gar

2 tbsp (30 mL) rice vine­gar 2 tbsp (30 mL) finely chopped fresh mint

3 cups (750 mL) juli­enned English cu­cum­ber

1/2 cup (125 mL) thinly sliced green onions

1/2 cup (125 mL) finely chopped fresh cilantro

1. To pre­pare dress­ing, whisk to­gether su­gar, vine­gar and mint un­til blended. Com­bine English cu­cum­ber, green onions and cilantro in a bowl. Add dress­ing and toss to com­bine. May be re­frig­er­ated for up to 30 min­utes.
