When Norca, the new restaurant inside the Le Germain Hotel on Daly Avenue, opened this fall, the focus was on chef Dominique Dufour’s ambitious menu. Dufour, a 31-year-old chef originally from Montreal, aims to highlight Northern cuisine through Canadian ingredients — and only Canadian ingredients. But the interior of Norca is also notable, its calming, sophisticated ambience welcoming tourists and locals alike. Wishbone chairs, leather armchairs, and velvet benches offer plenty of seating options, while wide plank floors contrast with the silver in Moroccan pendant lights. The result is comfortable but sophisticated — just like the Canadian food served.
