Waxwing Gin

It’s a gin and tonic with a devil-may-care at­ti­tude. The first spirit pro­duced by Gatineau’s Artist in Res­i­dence dis­tillery, Waxwing Bo­hemian Gin is in­spired by a pretty Cana­dian bird, one that is known to par­take of the ju­niper berries that pro­vide the essence of gin. If the berries hap­pen to be fer­ment­ing when the waxwings touch down, they’ve been known to get a lit­tle drunk, fly­ing off course and end­ing up in un­ex­pected places. Tast­ing notes de­scribe this new gin as ex­hibit­ing limpid or­ange from a mac­er­a­tion of rose­hip berries and plant ex­tracts. Sea­soned sip­pers will also be able to dis­cern fresh ju­niper, lemon peel, and co­rian­der on the nose. Recipe 1∏ oz. Waxwing gin 3 oz. tonic wa­ter 1 lime wedge
