Sap still flow­ing!

De­spitethe record­break­ing high tem­per­a­tures we have been ex­pe­ri­enc­ing in the Town­ships since last week, the sap in the maple trees is still flow­ing! “The sap is still run­ning. It even kept run­ning over the week­end. I was a lit­tle sur­prised my­self and I think it’s be­cause the ground is still frozen. We’ve been able to make a lit­tle syrup ev­ery day, but we’re still quite be­hind, of course,” com­mented Stan­ley Holmes of Way’s Mills.

“It’s not a good year. We started off aw­ful early and my ex­pe­ri­ence tells me that we usu­ally have six or seven weeks of run­ning, and this is week five,” said the maple syrup pro­ducer. The syrup be­ing pro­duced is a lit­tle darker than at the be­gin­ning, but still of good qual­ity.
