The Boiling has Begun
With the annual maple syrup season getting under way, news reports have mostly been focusing on the province’s quota system coming under attack. But what about the sugar season itself? It started off pretty slowly for Townships producers in late February but things are starting to look up.
We only boiled one day the first week and we had the buckets on hold. The whole winter the weather has been bizarre,” said Stanley Holmes of Way’s Mills late in February. Calling back for an update on March 7th, things were looking more encouraging. “We made syrup last Monday and now we’re ready with the buckets. It’s been so cold the last few days that it’s taking a lot of time for the sap to come up, but with the warmer temperatures we’ll be expecting a good run this week,” added Stanley Holmes junior.
