The menus of Miche­lin-starred Piège are meant to be “en­joyed as a game” and he calls the four he of­fers us in this cloth-bound tome, “The Rules of My Game.” The stun­ning pho­to­graphs by Stéphane de Bour­gies of the in­gre­di­ents and the fin­ished dishes are ei­ther dis­cour­ag­ing or in­spi­ra­tional, depend­ing on the reader’s skill set and am­bi­tion. This is a big book for the se­ri­ous chef, or a big book for a cof­fee ta­ble, to be ad­mired and never brought to the kitchen.
