MAKES 10 Caillettes
CAILLETTES ARE BEAUTIFUL, soft oval sausages made of pork and spinach (or Swiss chard). They make a perfect lunch along with a simple green salad and maybe a dab of Dijon mustard. You might think caillettes are made with small quail (cailles), but it’s the ovoid shape that gives the name caillette. Danielle encases hers in caul fat to keep the shape, but as it is not always available, I suggest draping the cailletes with bacon.
