CAIL­LETTES ARE BEAU­TI­FUL, soft oval sausages made of pork and spinach (or Swiss chard). They make a per­fect lunch along with a sim­ple green salad and maybe a dab of Di­jon mus­tard. You might think cail­lettes are made with small quail (cailles), but it’s the ovoid shape that gives the name cail­lette. Danielle en­cases hers in caul fat to keep the shape, but as it is not al­ways avail­able, I sug­gest drap­ing the cail­letes with ba­con.
