In this deeply per­sonal cook­book he shares the “riches of his home­land,” tips on build­ing com­plex South­ern flavours in lay­ers in the pan, on ‘smoth­er­ing.’ There is depth in his food and his recipe writ­ing — from the sim­plic­ity of a good but­ter­milk bis­cuits or get­ting fried chicken right, to Stuffed Grouse with Madeira Sauce (and Dirty Rice!)
