Chocolate-Infused Sweet Potatoes

Sweet Potatoes 3 lbs

Kosher Salt 1/2 Tbs

Heavy Cream 1/2 cup

Whole Milk 1/2 cup

Butter 6 Tbs, softened

Unsweetene­d Cocoa Powder 1 Tbs

Brown Sugar 1 tsp

7 PREHEAT the oven to 425°F. Place the sweet potatoes on a foil-lined baking sheet and cook for 45–60 minutes. Allow them to cool then peel and discard the skin.

8 PLACE the sweet potatoes, salt, brown sugar and cocoa powder into a food processor, turn on low speed and gradually add the milk and cream. When you have a smooth texture, add the butter little by little until the potatoes are smooth and creamy. Season with salt and black pepper to taste.
