Olympic sized lunch
Chef Peter McDiarmid at the Dinosaur Trail Golf and Country Club got into the Olympic spirit this weekend and put together a few dishes fit for a champion. With healthy, high calorie meals with low carb, high fat, high protein, and lots of vegetable matter in mind, McDiarmid prepared salmon al aragosta, pollo alla cacciatora, bistecca alla zingara, zucchini al pomodoro, and an eye-popping cucumber salad dish that would be typical of a good Olympic diet. Believe it or not, all of this would be just one meal in a day for an Olympian, who typically eats close to a gut-busting 12,000 calories a day. This meal, McDiarmid estimates, would only be about 5,000 calories, with the 16 oz. steak alone clocking in at 2,000 cals.
