Olympic sized lunch

Chef Peter McDiarmid at the Di­nosaur Trail Golf and Coun­try Club got into the Olympic spirit this week­end and put to­gether a few dishes fit for a cham­pion. With healthy, high calo­rie meals with low carb, high fat, high pro­tein, and lots of veg­etable mat­ter in mind, McDiarmid pre­pared salmon al aragosta, pollo alla cac­cia­tora, bis­tecca alla zin­gara, zuc­chini al pomodoro, and an eye-pop­ping cu­cum­ber salad dish that would be typ­i­cal of a good Olympic diet. Be­lieve it or not, all of this would be just one meal in a day for an Olympian, who typ­i­cally eats close to a gut-bust­ing 12,000 calo­ries a day. This meal, McDiarmid es­ti­mates, would only be about 5,000 calo­ries, with the 16 oz. steak alone clock­ing in at 2,000 cals.
