Stéphane Le­vac, owner of Le­vac & Fils butcher shop in Dal­housie, Québec, will sell about 1,200 meat pies be­tween now and Christ­mas.

The third-gen­er­a­tion butcher is known for his 28 flavours of sausages, which are es­pe­cially pop­u­lar dur­ing bar­be­cue sea­son.

But when the first flakes of snow be­gun to flutter, Mr. Le­vac sets to pre­par­ing chicken pot pies, tour­tières, and cré­tons.

Cool weather trig­gers the im­pulse to start think­ing about get­ting pies for the hol­i­days.

The shop, lo­cated at 165 Prin­ci­pale, was founded in 1929 by Mr. Le­vac’s grand­fa­ther, Do­minic.
