Creamy co­conut milk adds sweet­ness to noo­dles

The sweet­ness of the co­conut milk in this noo­dle recipe will have you lick­ing the bowl clean.

In ad­di­tion, the com­bi­na­tion of lime juice, gin­ger, curry paste and fresh cilantro gives you a mouth­ful of flavours.

I used shrimp but you could sub­sti­tute for it with chicken.

The rice noo­dles are easy to pre­pare be­cause you boil the wa­ter and then re­move it from the stove­top be­fore adding the noo­dles. In four min­utes they are cooked.

The dish is an easy week­night meal that will warm you dur­ing these cold win­ter snaps.
