ENERGY BALL COOKIES
Simple, fast and effective for the athlete on the go, Energy Ball Cookies are the perfect snack to have an hour before activity, says Pearle Nerenberg, author of The Nutrition
Edge for Hockey Performance. The cookies are simple to put together and a favorite of Nerenberg’s athletes. Better yet, the cookies can be eaten as more than just a pre-game snack if the ingredients are modified slightly. “They can also be a great addition to a recovery snack provided you add a protein source to them, such as eggs, cheese or, for vegan athletes, a soy milk,” Nerenberg said.
3/4 cup graham cracker crumbs 1/4 cup raisins 3 tbsp peanut butter 2 tbsp honey 2 tbsp skim milk powder 1 tbsp water 2 tbsp coconut flakes
Place the coconut flakes in a shallow dish, and combine remaining ingredients in a separate bowl. Form eight balls, and roll each ball in the in the coconut flakes until the ball is covered. If the batter is too dry, more water can be added. If the coconut isn’t sticking, each ball can be basted in a small amount of liquid honey. A serving is two balls.
